Ingredients

  • 3 cups old-fashioned gluten-free rolled oats (we like One Degree GF Organic Rolled Oats)

  • 1 cup raw pecans, chopped

  • 1 cup raw cashews, chopped

  • 1 cup hulled raw pumpkin seeds

  • 1 cup hulled raw sunflower seeds

  • 1 cup unsweetened coconut chips

  • ½ cup pure maple syrup

  • ½ cup extra-virgin olive oil

  • ½ cup packed light brown sugar

    • Optional swap: Lakanto Golden Monk Fruit Sweetener

  • 1 teaspoon kosher salt, plus more to taste

  • 1–2 tablespoons Hermetica Chai (powdered, caffeine-free chai with adaptogens and botanicals)

 


 

Instructions

  1. Preheat oven to 300°F and line a rimmed baking sheet with parchment paper.

  2. In a large bowl, combine oats, pecans, cashews, pumpkin seeds, sunflower seeds, and coconut chips.

  3. Add maple syrup, olive oil, brown sugar (or Lakanto Golden Monk Fruit), and salt. Stir until evenly coated.

  4. Spread mixture evenly on the baking sheet.

  5. Bake for 45–60 minutes, stirring every 15 minutes.

  6. During the final 5–10 minutes, once golden, sprinkle 1–2 tablespoons of Hermetica Chai over the granola, stir, and return to the oven.

  7. Remove and let cool completely before storing.
